The potatoes are machine-peeled, then hand-peeled to remove any remaining imperfections and diced. They are then placed on baking trays and cooked in a steam oven. The vegetables are NOT boiled in water, to ensure they maintain their organoleptic qualities and retain optimum nutritional values. Once cooked, they are dressed with extra virgin olive oil, salt and parsley. Finally, the product is packaged in a controlled atmosphere.
